At what temperature
Water extracts coffee at 90 °C, but nobody can drink at that temperature without burning themselves.
Above 70 °C, the tongue only registers heat and bitterness; thermal receptors block any subtlety. Coffee really starts to be tasted when it drops to 65 °C, and reveals its clearest, sweetest notes as it cools a little more.
If we serve it and ask you to wait a minute, it is not neglect: it is so you can taste it whole.
