In Buenos Aires' historic cafés there is an unwritten rule that sums up decades behind the counter: if you order a cortado, they bring you a cortado.
Specialty coffee sometimes gets tangled in explanations nobody asked for. Rigorous calibration, the exact ratio and the scales are our responsibility behind the scenes, not an exam for the person coming for a drink.
We look after every millilitre so that all you have to do is sit down and enjoy what you chose.
