Describing and judging

When we taste coffee we do two things, and it's best to keep them apart. One is describing what it has: how much acidity, what body, how long it stays in the mouth. The other is deciding whether we like it.

Descriptions can be compared between people. Two tasters may not agree on everything, but they are measuring the same thing. Liking belongs to each person. There's no arguing with it.

Description is what we can work with when someone doesn't like a coffee.
