The water
Water does the extracting. It's the solvent that takes from the coffee everything that ends up in the cup. Its hardness and mineral content change how much it takes and what it takes.
We check it without instruments: same coffee, same method, one cup with tap water and another with mineral water, one after the other. The difference speaks for itself.
A recipe that works in one kitchen may not work in another.
