Where flavour enters
Smells reach the brain by two routes. One is through the nose when you breathe in: that's how you smell freshly ground coffee. The other comes from the back of the mouth when you breathe out with the drink inside.
That second route builds almost everything you call flavour. The brain blends it with taste and touch and gives you one sensation, which seems to come from the mouth.
With a sip in your mouth and your nose blocked, sweetness and bitterness remain. Everything else goes.
