As it cools
The same coffee doesn't taste the same at two minutes and at ten. It hasn't gone wrong.
The tongue's sensitivity changes with temperature, so sweetness and acidity feel different depending on how hot it is. As it cools, fewer compounds evaporate, changing what reaches your nose too.
Coffee opens as it cools, like wine in a glass. The first sip isn't enough to decide.
