The material
Paper cools quickly and passes on a cellulose taste. Metal conducts heat so quickly that it burns your lips before letting you taste the drink, besides altering its taste. Ordinary glass disperses heat without retaining it.
Ceramic and porcelain keep the heat where it belongs and do not interfere with extraction.
We serve in ceramic cups because coffee should not have to fight the container holding it.
